The property spans five acres and features a major waterpark, a private beach, retail spaces, a beach club, and a mix of fine-dining and casual restaurants.
Role Summary
The Chief Steward oversees all stewarding activities across kitchens, service zones, and back-of-house food and beverage areas. The role is focused on maintaining top-tier cleanliness, hygiene, sanitation, and upkeep standards throughout the operation.
Key Duties
- Direct all stewarding functions to keep kitchens, storerooms, dishwashing areas, and equipment clean and hygienic.
- Set up and track cleaning routines, waste sorting practices, and pest control processes in line with HACCP and hotel requirements.
- Manage dishwashing, silver care, and the correct handling of kitchen tools and utensils.
- Ensure dishwashing machines, kitchen assets, and cleaning chemicals are used and maintained properly.
- Watch for breakage, reduce waste, and apply measures that help prevent losses.
- Provide culinary and service teams with a steady supply of clean utensils, chinaware, glassware, and kitchen tools.
- Guide, train, and encourage the stewarding team to deliver strong operational results.
- Create work schedules, assign duties, and review staff performance regularly.
- Run ongoing training on hygiene practices, chemical handling, and safety procedures.
- Control the stewarding budget, including chemicals, cleaning materials, and equipment costs.
- Keep accurate stock records for stewarding supplies and raise replenishment requests when needed.
- Make sure all stewarding practices follow HACCP, food safety, and local health regulations.
Candidate Profile
The ideal applicant should bring prior experience leading stewarding operations in a 5-star hotel or resort environment. Strong knowledge of hygiene systems, sanitation controls, and HACCP compliance is important, along with the ability to supervise and inspire a varied team. Clear English communication is expected, and additional languages are an advantage. The role also calls for strong problem-solving ability, good organization, cost awareness, and readiness to work shifts, weekends, and under pressure.
Qualifications
- Previous background as a Chief Steward in a 5-star hotel or resort.
- Solid understanding of HACCP, hygiene, and sanitation standards.
- Leadership and team supervision capability.
- Effective communication skills in English; other languages are beneficial.
- Strong problem-solving, organizational, and cost-control abilities.
- Willingness to work shifts, weekends, and in high-pressure situations.
