Quality Control Operative

Role overview

Dawn Meats is hiring a Quality Control Operative for the Carrolls Cross Convenience Foods & Retail Quality Team in Carrolls Cross, Co. Waterford, Ireland. This is a permanent, full-time, on-site position reporting to the Technical Manager.

The role sits within the FSQ team and supports the production function by carrying out regular checks on product quality, food safety, hygiene, and customer specifications across the Convenience Foods and CX Retail production areas.

Key responsibilities

• Follow an hourly checking timetable to complete quality and due diligence inspections, confirming products meet customer and legal standards.
• Perform daily pre-start checks in production areas.
• Capture product quality data and share updates regularly with the quality team lead and production shift manager to support continuous improvement.
• Collect meat and environmental samples for microbial analysis.
• Support projects assigned by the QC Team Leader, Quality Supervisor, or FSQ Managers.
• Use collected data and analysis to support quality control decisions.
• Help production colleagues with product safety, quality, and traceability procedures when needed.
• Take part in customer and third-party audits.
• Help maintain an “always audit ready” culture across the production area.

• Willingness to learn and develop.
• Flexibility to support other QC team members when required.
• Availability to work a three-shift rotation, including Saturdays when scheduled.
• Own transport is preferred.

Additional information

This position requires working across day, evening, and mid-shift rotations. Saturday work may also be part of the schedule when assigned. The role is intended for someone who can adapt to a busy quality and production environment and contribute to a strong compliance-focused culture.
