About GAIA Dubai

GAIA Dubai is a modern Greek fine-dining destination that blends refined Mediterranean cuisine with an elegant dining setting and high-end hospitality. Its wine focus spans Greek, Mediterranean, and international premium labels, with an emphasis on guest engagement and storytelling.

Role Overview

The Sommelier will oversee the wine offering, shape the guest experience through knowledgeable recommendations, and support polished, luxury-level service in line with GAIA’s standards.

Key Responsibilities

  • Develop and keep the wine list aligned with the restaurant’s culinary direction and brand image.
  • Suggest wines and food pairings based on menu choices and each guest’s taste.
  • Take charge of floor wine service with smooth, refined presentation.
  • Oversee cellar organization, stock movement, storage conditions, and inventory control.
  • Maintain professional relationships with suppliers, distributors, and wine producers.
  • Train service teams regularly on wine knowledge, service standards, and effective upselling.
  • Support wine purchasing, pricing decisions, and cost management.
  • Follow all UAE rules and licensing requirements related to alcohol service.
  • Lead tastings, wine-focused events, and special guest experiences when needed.
  • Keep current with international wine developments and trends.

Requirements

  • At least 2 to 4 years of sommelier experience in fine dining or luxury hospitality.
  • WSET Level 2 or 3 certification is expected, with Level 3 preferred; CMS certification will be considered an added advantage.
  • Solid understanding of Old World wines, particularly from Greece, France, Italy, and Spain.
  • Strong interpersonal and guest-facing communication abilities.
  • Developed palate with the ability to match wines to complex dishes.
  • Prior experience in busy luxury restaurants is preferred.
  • Well-groomed appearance and strong service etiquette.
  • Comfortable performing under pressure in a high-paced setting.
