Role overview
Marina Bay Sands is seeking a Steward Supervisor to guide the stewarding team and keep restaurant operations clean, organized, and compliant with hygiene standards. This position involves hands-on supervision, training support, inventory control, and close coordination with the stewarding leadership group to ensure smooth day-to-day service.
Key responsibilities
- Oversee and support a mix of full-time and casual stewarding staff in keeping restaurant areas clean.
- Track inventory for operating equipment and supplies, including OS&E and other stewarding materials.
- Supervise cleanliness across the restaurant floor, including floors, walls, and equipment.
- Ensure proper washing and sanitizing of ice machines.
- Oversee cleaning of shelves, filters, and holloware, including polishing tasks.
- Monitor the dish station and dishwashing area to maintain service readiness.
- Manage cleaning and handling of equipment trolleys.
- Supervise waste handling, including garbage disposal and upkeep of the garbage area.
- Ensure toilets and related areas remain clean and presentable.
- Maintain daily stewarding SOPs and support consistent operating standards.
- Help coordinate the stewarding roster, especially when senior leaders are unavailable.
- Support recruitment, staff performance reviews, and other HR-related stewarding matters.
- Keep bulletin boards and printed updates current for the team.
- Share important operational updates with all stewarding staff.
- Make sure team members have the knowledge, tools, and equipment needed to work effectively.
- Conduct on-the-job and technical training for newly hired stewards.
- Assist with all stewarding training activities.
- Prepare required food and beverage-related items on a daily basis.
- Ensure equipment is properly stored and maintained after use.
- Encourage and motivate the stewarding team.
- Check that sufficient equipment and operating supplies are available and aligned with par levels.
- Receive, manage, and escalate guest feedback to the Director of Stewarding or Executive Chief Steward.
- Coordinate with suppliers and contractors during operations.
- Support compliance with the food safety programme.
- Liaise with the DM Inspector and Hygiene & Sanitation Manager as needed.
- Ensure all team members follow hotel safety, hygiene, and sanitation procedures.
- Handle other stewarding-related duties as assigned by leadership.
Requirements
- At least high school O Level education; a diploma in any discipline is considered an advantage.
- Minimum 2 years of experience in restaurant and bar operations, including at least 1 year in a supervisory role.
- Working knowledge of stewarding practices is required.
- Previous leadership exposure in stewarding will be beneficial.
- Strong written and spoken English skills.
- Good understanding of food and beverage operations.
- Physically able to lift heavy items.
- Comfortable working on a 24-hour rotating shift schedule.
- Must be willing to work different shifts, including mornings, afternoons, nights, and public holidays.
