Role overview
The Grace Westport Estate is recruiting a Bartender for its new hotel opening in spring 2026 in Westport, County Mayo, on Ireland’s Wild Atlantic Way. This is a full-time, on-site position within the bar and lounge operation.
As a Bartender, you will be responsible for delivering a polished, dependable, and engaging beverage service experience. You will represent the hotel on the front line, combining technical drink preparation with warm guest interaction, strong service discipline, and close compliance with hospitality standards.
Key duties
- Provide attentive, courteous, and personalised service to guests in the bar and lounge areas.
- Welcome guests promptly, record drink orders accurately, and ensure service is delivered in a timely manner.
- Interact with guests in a professional and refined way to improve their overall visit.
- Identify guest needs in advance and resolve questions or issues efficiently.
- Recommend house cocktails, premium spirits, and hotel experiences to help support sales goals.
- Mix and serve alcoholic and non-alcoholic drinks according to approved recipes, correct portions, and presentation standards.
- Keep beverage quality, taste, and appearance consistent at all times.
- Show strong knowledge of the drinks menu, wine selection, and ongoing promotions.
- Serve alcohol responsibly and in line with licensing requirements and hotel policy.
- Carry out bar setup and closing procedures before and after service.
- Monitor and maintain stock of drinks, garnishes, glassware, and other operating supplies.
- Assist with stock control through rotation, requisitions, and waste reduction.
- Escalate breakages, shortages, and stock variances to the Bar Supervisor or Manager.
- Keep bar counters, tools, storage areas, and back-of-house areas clean and well maintained.
- Follow HACCP, hygiene, and local health and safety rules.
- Handle glassware, equipment, and cleaning chemicals safely.
- Work closely with front-of-house colleagues, kitchen teams, and management to keep service running smoothly.
- Share guest preferences, special requests, and operational updates clearly with the wider team.
- Attend briefings, training sessions, and team meetings when needed.
- Support team members during busy periods to uphold service standards.
- Carry out additional tasks assigned by management.
Experience and skills
This role suits someone with 1 to 3 years of experience as a bartender, preferably in a 4-star or 5-star hotel, premium restaurant, or high-end bar. The ideal candidate will have a solid understanding of classic and modern cocktails, spirits, wines, and beers, along with confidence using POS systems and handling cash accurately. Strong communication, guest service, multitasking ability, numerical awareness, a professional presentation, and a positive, hard-working attitude are essential. The role also requires flexibility for shifts, weekends, and public holidays.
