Role summary
The Executive Pastry Chef will lead pastry and bakery operations for Raffles Doha and Fairmont Doha. The role calls for a highly creative culinary leader who can design exceptional pastry experiences, maintain uncompromising standards of quality and presentation, and contribute to memorable guest moments across the properties.
This position is also responsible for building a culture of collaboration and continuous improvement, guiding the pastry team, partnering with other hotel departments, and ensuring operational, financial, and hygiene standards are consistently achieved.
Key responsibilities
- Direct all pastry and bakery activities across the hotel, ensuring consistent excellence in quality, appearance, creativity, and execution.
- Create inventive pastry, bakery, dessert, and confectionery items that match the luxury positioning of both brands.
- Work with the Executive Chef and culinary leaders on seasonal menus, special occasions, and tailored guest experiences.
- Make sure all products meet brand expectations, guest requirements, and food safety standards.
- Run day-to-day pastry kitchen operations, including production scheduling, stock control, budgeting, and allocation of resources.
- Track food costs, labor efficiency, and operating expenses while protecting quality and guest satisfaction.
- Lead, coach, train, and evaluate the pastry team to build capability and performance.
- Encourage a workplace culture focused on creativity, teamwork, improvement, and professional development.
- Maintain strict standards for hygiene, sanitation, and safety in line with company policies and local regulations.
- Partner with Food & Beverage, Banquets, and Events teams for conferences, weddings, VIP functions, and other special events.
- Select and assess high-quality ingredients and products, while building supplier relationships that support quality and sustainability goals.
- Handle guest preferences, dietary needs, and special requests with precision and personalized care.
- Stay current with industry developments, new techniques, and market trends to keep the pastry program fresh and relevant.
- Support hotel promotions, campaigns, and initiatives through creative pastry concepts and culinary execution.
- Help deliver departmental and hotel targets by improving operations, guest satisfaction, and financial performance.
Candidate profile
The ideal candidate will bring senior-level pastry leadership experience from a luxury hotel, fine-dining venue, or globally recognized hospitality brand. Strong knowledge of classical and modern pastry methods, bakery production, chocolate, sugar work, plated desserts, and confectionery is essential.
They should have a proven record of developing innovative concepts while maintaining top-tier standards for quality and presentation. The role also requires excellent leadership, team development, planning, organization, and time management skills in a fast-paced, high-volume luxury setting.
Experience in menu planning, food costing, budgeting, stock management, and operational planning is important, along with a solid understanding of food safety, sanitation, and HACCP principles. Strong communication, collaboration, and attention to detail are also key.
Experience leading large banquets, VIP events, and customized culinary experiences is considered highly desirable. Candidates should align with the brand promise of luxury, support an inclusive culture, and help create an environment where colleagues feel valued, supported, and recognized.
