Role summary
In this military role, cooks support Canadian Armed Forces personnel and National Defence staff by preparing wholesome meals and food items. The work can range from standard cafeteria service to elaborate multi-course dining for military and civilian guests.
Key duties
- Plan, prepare, and serve meals for a variety of settings, including everyday service and formal events.
- Help receive, track, and manage food and non-food inventory.
- Follow workplace health, safety, and sanitation practices at all times.
- Ensure dietary needs related to religious and spiritual observances are respected.
- Maintain food safety standards and support Defence food-service requirements.
- Use, clean, and care for kitchen equipment, food-service areas, and related facilities.
Work setting
Cooks may be stationed in different environments across Canada or deployed overseas. Most serve at bases and wings, while others work with land-based operational units or aboard ships and submarines.
In the Regular Force, you will be posted to your first base after completing the required training. Posting flexibility may be limited, so relocation during your career is likely. In the Primary Reserve Force, you serve through a specific Reserve unit and generally work part-time without being required to relocate.
Reserve Force service usually involves one evening per week and some weekends at a minimum, with the possibility of full-time work. Reserve members may also volunteer for deployments inside or outside Canada.
Entry routes
This role offers Direct Entry and Paid Education options. The Non-Commissioned Member Subsidized Training and Education Plan (NCMSTEP) may also be available.
Education and eligibility
Applicants must have completed the provincial equivalent of Grade 10, or Secondary 4 in Quebec, and must include Grade 10 Workplace Math or Math 414 / CTS 4 in Quebec. A college diploma or certificate in culinary arts or food services is considered an advantage, and the Forces will assess whether the program aligns with the training requirements. Foreign education may also be accepted.
If selected under NCMSTEP, recruits are paid to attend an approved Canadian college program. During the summer, students complete basic training and on-the-job training, and they receive full-time pay along with medical and dental coverage and vacation with full pay in return for a service commitment. Applicants for this route must apply both to the Canadian Armed Forces and to the relevant college.
Training
Training begins with Basic Military Qualification at the Canadian Forces Leadership and Recruit School in Saint-Jean-sur-Richelieu, Quebec. This stage covers the core military skills expected of all trades and is physically demanding because recruits must meet the Canadian Armed Forces fitness standard.
Cooks then attend trade training at the Canadian Forces Logistics Training Centre in Borden, Ontario. Instruction combines theory, demonstrations, and practical exercises, and covers:
- Cooking vocabulary, weights, and measurements
- Unit conversions and equivalents
- Basic baking and meat preparation
- Preparing food in both small and large quantities
- Food safety methods and procedures
- Food-service standards and basic cost control
- Fire prevention and safety
- Equipment and facility upkeep
Those enrolled in NCMSTEP may complete part or all of their occupational qualification training at an approved Canadian college, university, or other post-secondary institution.
Additional development opportunities may include instructional methods, Red Seal certification, submarine service, Flight Steward duties, Food & Beverage Manager certification, and the National Food Safety Training Program.
Part-time service
This occupation is also available on a part-time basis with the Army, Navy, and Air Force at selected locations across Canada. Reserve Force members typically serve in their community and may balance service with school or civilian employment. They are paid while training, are not required to relocate, and may choose to volunteer for a move to another base.
Part-time cooks may work at a military base, wing, home port, or ship in Canada, and some units may offer fixed-term full-time opportunities. Reserve members are trained to the same standard as Regular Force members and usually begin with their home unit before progressing to basic occupational training and on-the-job experience.
Reserve Force compensation is 92.8% of Regular Force pay, along with a reasonable benefits package and potential pension contributions.
