Mount Wolseley Hotel, Spa & Golf Resort is seeking a Restaurant Manager to take charge of the restaurant operation and support the wider hotel team. The position reports to the Operations Manager and offers the chance to represent the hotel professionally within its wedding segment. This is a leadership role within a 4-star deluxe spa and golf resort set in County Carlow.

The property features an 18-hole championship golf course, a Sanctuary Spa, leisure facilities including a 20m indoor pool, and elegant accommodation with modern amenities and a strong service culture.

Key responsibilities

The Restaurant Manager will oversee the day-to-day running of both Fredrick's Restaurant and The Green Room, guide the team, and ensure service standards remain consistently high. The role also includes commercial oversight, team development, budgeting, and close coordination with other departments to keep operations running smoothly.

Terms and conditions

This position is based onsite in Carlow, County Carlow, Ireland and is a full-time role.

Extra details

The restaurant leadership remit includes managing staffing, forecasting, costs, stock, health and safety, duty management shifts, and coordination of menus and specials with the Executive Head Chef. The role also involves staff reviews, talent spotting, delegation, management communication, and attendance at management meetings as needed.

Work environment

The successful candidate will be part of a high-end hospitality setting that serves breakfast, lunch, and dinner and handles more than 600 covers per day.
